One-Pot Dairy Free Creamy Ham Pasta Recipe

Ready in 20 minutes flat, my one-pot dairy free creamy ham pasta recipe is the perfect quick and easy family dinner. Ham can be swapped for bacon or diced chicken breast (just ensure it's fully cooked through) or a veggie meat alternative.

A serving of homemade creamy pasta

Serves 2 adults & 2 children


Keep covered in the fridge for 2 days or freeze for up to 3 months and reheat in microwave, adding a splash of water to loosen if required.


INGREDIENTS

- 1 tbsp oil

- 8 slices ham

- 300g dry pasta

- 700ml (low salt) hot chicken / veg stock

- 150ml plant-based milk* (I used oat milk)

- 150g frozen peas

- 2 tbsp nutritional yeast (optional but helps give a cheesy flavour)

- 100g grated dairy free cheese*


METHOD

1. Chop ham roughly into cubes, weigh out your other ingredients & prepare your stock

2. Heat oil in a large, lidded pan on a medium / high heat then when hot add the ham and cook, stirring often for 2 minutes

3. Add the pasta and stir for 1 minute until coated, then add the hot stock & milk. Stir well, bring to boil then reduce heat to low and cover with lid.

4. Cook for 10 minutes, stirring every 2 mins.

5. Add the peas & nutritional yeast, stir again and cover for another 3 minutes or until pasta is cooked

6. Stir through the cheese until combined, then serve (with a good crack of black pepper if that’s your jam)
