Dairy Free Blueberry & Vanilla Baked Oats

I posted this recipe on Instagram recently and it went viral, reaching over 1.3 million people! Healthy, easy and so delicious - this is almost like a cake in texture so it's great for dessert as well as breakfast.
Dairy / nut free

Serves 2 adults or 1 adult, 2 children
Keep covered in the fridge for 2 days.
INGREDIENTS
- 80g plain porridge oats
- 2 eggs
- 4 tbsp dairy free vanilla yoghurt (eg. Alpro) or use plain yoghurt and add a dash of vanilla extract
- 1 heaped tsp baking powder
- 1 tsp maple syrup (optional)
- 100g blueberries
METHOD
1. Pre-heat oven (200c / 180c fan) or air fryer (180c)
2. Grease a small oven dish with spray oil or butter / margarine
3. Mix the oats, eggs, yoghurt, maple syrup and baking powder together in the dish then stir through the blueberries
4. Bake for 20-25 minutes until golden on top and cooked through
5. Serve with more yoghurt or dairy free custard
