Pizzadilla

A speedy vegan lunch idea that will be a hit with the kids.

Dairy / soya / egg / nut free


Takes 10 minutes. Serves 1 adult or 2 children.


Storage: best fresh, do not freeze.


INGREDIENTS

- 1 tortilla wrap

- 1 tbsp tomato puree

- 1/2 tsp mixed herbs

- 2 tbsp water

- Handful of grated vegan cheese (I used Cathedral City plant based)


METHOD

  1. Mix the tomato puree, water & herbs in a small bowl

  2. Spread over the tortilla wrap

  3. Add grated cheese to cover half the wrap then fold over to make a crescent

  4. Heat a dry frying or griddle pan to low / medium heat (not too high or the cheese won't melt) and cook for 2-3 mins on each side until lightly golden

  5. Slice and serve
