Berry & Peanut Butter Flapjacks

These always disappear very quickly in our house! They're soft and squidgy, with no added sugar so suitable from 6 months +

Dairy / egg / soya free


Makes 12

Keep covered in fridge for 2 days, freeze between sheets of baking paper for up to 3 months and defrost overnight in fridge


INGREDIENTS

- 2 ripe bananas (the browner the better!)

- 160g plain oats

- 100g coconut oil (melted - pop in the microwave for a few seconds if needed)

- 2 tbsp smooth peanut butter (I use the 100% nuts version)

- Handful of berries, chopped or crushed


METHOD

  1. Pre-heat oven to 180°c fan

  2. Mash the bananas in a large bowl then add the oats, melted coconut oil and peanut bitter. Mix well until combined

  3. Stir through the berries

  4. Pour mix into a lined baking tray and push down, spreading to the edges and ensuring it's packed firmly

  5. Bake for 25 minutes or until golden around the edges

  6. Cool & cut into squares, serve
